My Vegan Fruit Sponge Cake (Click below for Recipe)
227g of self-raising flour
227g dried mixed fruit (sultanas, raisins, currants, and orange and lemon peel etc add some dates if you like)
4oz caster sugar
4 tbsp. of soy/almond milk
½ cup of applesauce (or you could use a mashed banana)
1 tsp (or more) mixed spice
4 oz chopped nuts (opt.)
Mix all in bowl/food processor.
Cook for 35-45 minutes.
